Gorgonzola Chips Gorgonzola Sauce: 1 pound Gorgonzola cheese _ quart milk
Take the pound of Gorgonzola cheese and bring to a boil. Melt the cheese completely, and then remove from heat. Puree the cheese mixture in a food processor. Add _ quart of milk to the cheese mixture and stir.
Chips: 2 medium Yukon gold or Idaho potatoes, peeled and sliced into 1/8-inch slices 3 tablespoons olive, canola, or peanut oil Salt and freshly ground black pepper
Preheat the oven to 400°F. Slice the potatoes into a bowl and immediately toss them with the oil. Season lightly with salt and arrange them in a single layer on a baking sheet. Bake in the oven until golden brown — about 12-15 minutes. Season again lightly with salt and pepper when they come out of the oven. Transfer to a rack to cool for maximum crispness. Serve with Gorgonzola sauce.
Bruschetta 4 pieces of crostini bread 2 ounces Roma tomatoes, diced 2 ounces fresh mozzarella, diced 1 tablespoon olive tapenade Pinch of fresh basil Balsamic reduction
Spread olive tapenade on crostini bread. Mix tomatoes and mozzarella with a splash of balsamic reduction, and add mixture to crostini. Top with fresh basil.
